As promised, here's Suzy's favorite. Ingredients; 2 lb.ground turkey 2 pks. Chili-o mix 1 large onion, chopped 2 16 oz. cans stewed tomatoes [not drained] 1 15 oz. can black beans [drained & rinsed] 1/4 cup pepper rings, chopped 8 oz. pack sharp cheese 8 oz. pack jack cheese 1 bunch green onions, chopped 1 tsp. cumin Prep; In large skillet brown turkey & drain. Add Chili-o, undrained tomatoes, & cumin. Cook until liquid is reduced. Place 1/2 of meat mixture in 9x13 glass casserole dish, layer can of black beans, then chopped onion, 1/2 of each cheese, & pepper rings. Add rest of meat mixture. Bake at 350 for 30 minutes. Top with remaining cheese and green onions. Return to turned off oven for 5 minutes until cheese is melted. Serve with sour cream and Tortilla chips. Of course, any Mexican dish can have black olives in it, we just don't happen to like them. 79 Barth Classic | ||
