I was wondering if anyone could tell me the roof weigh capacity or at least an estimate of what they can hold? In other words would it hold a couple of people for an extended amount of time?

The roof is quite strong, but I'd suggest using plywood to spread the load of chairs, etc., if you intend it for a spectator platform. Normal walking about on the roof won't cause a problem.

Structure needs to be more robust for that. A couple members do have coaches equipped
For NASCAR watching and such -- with diamond tread aluminum roof. If you search posts, you can find pics of the roof framing as seen from inside w headliner pulled out, as recently as last Autumn.
